Bean Sprouts

Day 1

  1. Rinse 1/2 cup of mung beans at least three times to remove all the impurities.
  2. Soak the mung beans in a bowl of water overnight or up to 24 hours.
  3. Cover the bowl with a plate. Keep the bowl of beans in a dark area at room temperature.

Day 2

  1. Transfer mung bean sprouts to a container or any storage with a strainer. I used my pasta strainer.
  2. Rinse them at least twice to discard the bean skins and other impurities.
  3. Drain the water.
  4. Cover the container or strainer.
  5. Keep the container inside a garbage bag or black bag to prevent any exposure to light.

Day 3-7

  1. Rinse mung bean sprouts two to four times daily to retain moisture. The hotter the environment, the more often you need to water the sprouts.
  2. While rinsing the sprouts, make sure to remove any unsprouted beans you find. This reduces the possibility of bean decay.
  3. Drain the water.
  4. Keep the container inside a garbage bag, and keep it in a dark area.
