Day 1
- Rinse 1/2 cup of mung beans at least three times to remove all the impurities.
- Soak the mung beans in a bowl of water overnight or up to 24 hours.
- Cover the bowl with a plate. Keep the bowl of beans in a dark area at room temperature.
Day 2
- Transfer mung bean sprouts to a container or any storage with a strainer. I used my pasta strainer.
- Rinse them at least twice to discard the bean skins and other impurities.
- Drain the water.
- Cover the container or strainer.
- Keep the container inside a garbage bag or black bag to prevent any exposure to light.
Day 3-7
- Rinse mung bean sprouts two to four times daily to retain moisture. The hotter the environment, the more often you need to water the sprouts.
- While rinsing the sprouts, make sure to remove any unsprouted beans you find. This reduces the possibility of bean decay.
- Drain the water.
- Keep the container inside a garbage bag, and keep it in a dark area.
